I'd suggest two possibilities:
Digital Recorder:
Get a digital recorder with timestamp function. And then use these recordings
by adding a special tag in the gpx file. (Description should be somewhere in
the OSM-Wiki) to display little icons in josm where the recording was done.
Digital Camera:
This is the way I normally do it. I take my digital camera and take snapshots
of the things I want to remember. (Church, Bus Stop, Streetname(sign),
City-name, ...) When I'm home I have my gps track which has timestamps and I
have the digital images, which have timestamps too. josm has the track
function (right click on a loaded track) import-images. If you do this you
see each picture at the exact location you took it. You even can sync the 2
clocks if they where out of sync while recording.
Minor:
Gpsdrive has the funktion set-waypoint-with-timestamp-without asking. Maybe
you can use this for something too.
